Sheri's Colorado Green Chili

Ingredients:

1 lb. ground pork (low fat percentage if possible)
1 tablespoon olive oil
1 large onion
3 cloves of garlic
1 tablespoon ground cumin
1 tablespoon oregeno
salt and pepper to taste
1/2 tablespoon sugar
1 -2 chipotle peppers in adobo sauce (depending on how hot you want it) - chopped and made into paste
1 tablespoon flour
2 cups chicken broth
1 small can tomato sauce
6 - 4oz. cans of diced/chopped green chiles

Preparation:

Brown pork. Drain fat and set aside. Brown onions and garlic in olive oil with cumin, oregano, salt, pepper, sugar and chipotle peppers. Add flour and cook one minute. Whisk in chicken broth then add tomato sauce and green chiles. Return pork to mixture. Simmer and cook 20 minutes.

Serve with flour tortillas. Serves 4.
